Roasted Asparagus
Ingredients
* 2# asparagus
* 1T. olive oil
* 1/3C. pine nuts
* salt and pepper
* 1/2C. parsley - chopped
* 1 lemon - grated
Directions
Preheat oven to 450 degrees F.
Toss asparagus, olive oil and salt & pepper and spread out onto a baking sheet. Roast until lightly browned, approx 15 minutes. Mix pine nuts, chopped parsley, and lemon zest, sprinkle over the asparagus and serve.
